Albert Bichot Fixin
Description: From a lesser-known village between Dijon and Gevrey-Chambertin, this is a wine made from carefully handpicked fruit vinified in Albert Bichotís gravity-fed winery in their special temperature controlled conical oak vats. The temperature is kept cool at the beginning of the fermentation to control the speed of fermentation and to extract fresh cherry, strawberry, and currant fruit flavours from the Pinot Noir. Towards the end of fermentation to temperature is raised to aid the extraction of colour and tannin from the grapes and give some body to the wine and so provide it with structural balance on the palate. The wine is aged in oak for just over a year – using about one third new oak. This is a fleshy and ripe wine on the palate that is already starting to show some tobacco and roast coffee characteristics as well as strawberry, and cherry fruit. There is sweet spice on the finish. Optimal drinking over the next three years or so.
